Ingredients

  • 6 large eggs
  • 2 cups spinach, chopped
  • 1/2 cup feta cheese
  • 1/4 cup milk (optional)
  • Salt and pepper
  • Olive oil spray (for the muffin tin)

Instructions

  1. 1Preheat oven to 180°C / 350°F and lightly grease a muffin tin.
  2. 2Whisk eggs (and milk if using) with salt and pepper.
  3. 3Stir in chopped spinach and feta.
  4. 4Pour into muffin cups.
  5. 5Bake until set, about 18–22 minutes.
  6. 6Cool slightly and serve, or store for meal prep.
