Ingredients
- 6 large eggs
- 2 cups spinach, chopped
- 1/2 cup feta cheese
- 1/4 cup milk (optional)
- Salt and pepper
- Olive oil spray (for the muffin tin)
Instructions
- 1Preheat oven to 180°C / 350°F and lightly grease a muffin tin.
- 2Whisk eggs (and milk if using) with salt and pepper.
- 3Stir in chopped spinach and feta.
- 4Pour into muffin cups.
- 5Bake until set, about 18–22 minutes.
- 6Cool slightly and serve, or store for meal prep.
